Potluck Perfect Quiche

We had a holiday potluck for our volunteers at work this week, and it is one of my favorite events of the year. I love potlucks. Everyone brings food they love, and it is like a buffet of everyone’s favorite dishes.

This, obviously, got me thinking about the best foods to bring. I brought my Cocoa Tequila Pulled Pork Tacos, but there were so many wonderful foods: brownies, cookies, li’l smokies, chips & dip, mac & cheese, and so many others. My Mango Cherry Braised Meatballs or my Mac & Cheese would have fit right in.

As I surveyed the foods everyone brought, I began to wonder if there was a perfect dish to bring to a potluck. After some research, I realized that a quiche fits the bill. It is quick, easy, can be served hot or at room temperature, and it is infinitely flexible.

You can change the filling to match just about any occasion, and you can even change it to a breakfast pastry by using bacon and hash browns. It can be made to accommodate your vegetarian friends by adding my vegetables and leaving out the meats.


  • Cast Iron Skillet


  • 1 pie crust
  • 7 eggs
  • 3/4 cup cream
  • 2 cup ham, diced
  • 1/2 lb. smoked gouda, shredded
  • 1/4 cup fresh basil


  1. Preheat oven to 350° F.
  2. In medium bowl, beat eggs and cream together.Beat Eggs and Cream
  3. Place pie crust in bottom of cast iron skillet.
  4. Pour ham, cheese, and basil into bottom of crust, tossing until mixed.Pour into Crust
  5. Pour egg and cream mixture over fillings. Make sure to spread the filling to ensure the egg mixture gets mixed in.
  6. Place in oven and bake until center is set, about 30-40 minutes.20181209_132213
  7. Serve warm, or at room temperature.
